Tuna Stuffed Chargrilled Peppers recipe

An excellent way to use up some store cupboard ingredients, this simple starter has bags of flavour and requires very little preparation. Peppers are stuffed with tuna, eggs, olives, celery and onion and then chilled in the fridge until you're ready to eat them.


  • 350g sweet jarred chargrilled peppers, whole
  • 185g tin tuna, drained
  • 1/2 red onion
  • Small handful pitted black olives
  • 2 hard boiled eggs
  • 2 tbsp. mayonnaise
  • 1/2 stick of celery
  • Salt and pepper


  1. Finely dice the red onion and the celery stick. Thinly slice the olives and dice the eggs. Combine tuna, onion, olives, eggs, celery and mayonnaise in a bowl. Season to taste.

  2. Carefully spoon the tuna filling into the peppers, being careful not to split them. Chill until serving.

Add some finely chopped carrot or some thinly sliced spring onions if you don't want to use the red onion. Recipe serves 4.
