Herbed Tuna Roast recipe

In this recipe, a tuna roast is marinated with herbs, vinegar and wine overnight before being BBQed to perfection. For the best flavour, leave the bones in and remove them when the tuna is cooked, or if you prefer, get your fishmonger to remove the bones before you cook the fish.


  • 1 x 900g tuna roast
  • 250ml white wine
  • 125ml balsamic vinegar
  • 70g dried thyme
  • 70g dried oregano
  • Salt and pepper


  1. Combine wine, vinegar, thyme, oregano, salt and pepper in a bowl. Pour over the tuna in a large dish, turn to coat, cover with cling or foil and place into the fridge for at least 4 hours.

  2. Preheat the BBQ to a medium heat. Brush the grate with oil.

  3. Place the tuna onto the cooking grate. Cook for 30 minutes, turning regularly to cook all parts of the fish. Slice into thin slices to serve.

Only cook super fresh tuna in this way - buy your tuna the day before you plan to cook it, or the day you want to cook it, to make sure it is as fresh as possible. Recipe serves 8.
