Tuna Chilli recipe

This healthy chilli is a delicious take on the more traditional beef chilli. Tuna is cooked with onions, garlic, peppers, chilli and passata before being spooned over boiled rice. Serve with some garlic bread.

Ingredients:

  • 2 x 185g tins tuna in water, drained
  • 200g passata
  • 1 onion
  • 1 red pepper
  • 1 garlic clove
  • 2 tsp. mixed dried herbs
  • 1 tbsp. chilli powder (or to taste)
  • Salt and pepper
  • 1 tbsp. oil

Directions:

  1. Thinly slice the onion. Mince the garlic clove. Slice the pepper in half and remove the seeds and pith, then dice the flesh.

  2. Heat the oil in a frying pan and add the onion and pepper. Fry for ten minutes or until soft and golden. Add the garlic and fry for 2-3 minutes longer, then add the chilli powder and fry for 1 minute.

  3. Add the tuna and passata, then season with the dried mixed herbs and salt and pepper. Bring to a simmer and cook for 25-35 minutes until the flavours develop. Spoon over boiled rice to serve.

If you don't have any passata, just use a tin of chopped tomatoes. Add mushrooms or more peppers too, if you like. Recipe serves 6.
