Simple Tuna Curry recipe

Curry makes a brilliant midweek supper, and this tuna curry couldn't be simpler - tuna combines with tomatoes, spices, seasonings and garlic in this simple recipe that takes just 15 minutes to cook.

Ingredients:

  • 1 onion
  • 1 x 185g tin tuna in brine, drained
  • 1 x 400g tin chopped tomatoes
  • 1 garlic clove
  • 1 tsp. minced ginger
  • 1 green chilli, seeds removed
  • 1 tsp. each ground cumin, ginger and turmeric
  • Small handful freshly chopped coriander
  • Salt and pepper
  • Oil

Directions:

  1. Thinly slice the onion. Finely dice the chilli and mince the garlic clove. Heat the oil in a frying pan. Add the onion and fry for about ten minutes until browned. Add the garlic, ginger and chilli. Fry for 3-4 minutes until fragrant.

  2. Add the cumin, ginger and turmeric. Fry for one minute. Add the tomatoes, stir well and bring to a simmer. Cook for 15 minutes, then add the drained and flaked tuna. Simmer for 10 minutes, season with salt and pepper and then stir through the coriander.

For a creamier curry, try using half a tin of tomatoes and half a tin of coconut milk. Recipe serves 2-3. Serve on a bed of fried rice.
